After a lot of holiday indulgence, we've been trying to simplify and clean up our eating a little. There were still a lot of sweets hanging around, too, so I can hardly justify any baking, even when it was 15 below and perfect for making a batch of cookies.
Since it was Friday and I was foisting leftovers on my family for dinner (I was a little overzealous with my menu for the week), I felt the least I could do was make a fresh dessert. I liked the sounds of this Pineapple Bread Pudding--warm and cozy without being overly decadent.
I really enjoyed this dessert and it warmed up very well the next day. We didn't have any fresh pineapple to go with, but you can be sure I included whipped cream. Mmmmmmmmm.
