I've been working hard to add fish to our menu on a more regular basis. We've had some hits and misses, and at least succeeded at adding more variety to our diet.
Tonight's selection was this Broiled Tilapia Parmesan. As I began preparing the recipe, it seemed vaguely familiar. It is strikingly similar to the Heavenly Halibut we had just a couple of weeks ago, but I decided to press on since there were a few differences.
The differences: I decided to use cod instead of tilapia. I know I like cod, and tilapia just isn't my favorite. It was a good decision, I'm sticking with cod in basic fish recipes from now on. The topping in this recipe is richer and more satisfying than that on the Heavenly Halibut recipe. I definitely prefer it.
