Eating All the Fall Things


Today turned out to be the day for a "feels like fall" cooking day. Of course, the main recipe, Slow Cooker Chili Mac, was planned a month ago.

I've been craving chili since the overnight temps dropped into the 50s a week ago. It just seems to feel like chili season to me. Today, that feeling was ramped up a little with an overcast and slightly damp day, and chili mac was just perfect for the occasion. It is not a remarkable chili recipe in that there are any unusual ingredients, but it is tasty. I suspect if you wanted a regular chili instead of chili mac, this would be a good candidate. The mac version is hearty and perfectly delightful with a little sour cream and a sprinkle of cheddar.

For dessert I decided to make an Apple Cider Doughnut Cake. It popped up in my Pinterest feed several times in the last month, and this seemed like a great day for it. Honestly, this is a super fast cake to put together and toss in the oven. The preheat timer on my oven hadn't even gone off, and I was ready to pour the batter into the bundt pan.


The cake smells delicious when baking, and it tastes amazing too. Lightly spiced with just a hint of apple flavor but no heavy, greasy residue from frying. I didn't choose to make the glaze because it seemed like the cinnamon sugar mix on the outside would be more than sweet enough. The fam didn't guess right away what this recipe was supposed to be, but they sure enjoyed it.

For a "feels like fall" day, this meal was spot on. We are all sitting around debating if we're going back for seconds on cake. Totally gonna happen.
