January is National Soup Month, and you'll notice that's definitely a recurring theme on the menu right now. Luckily, Illinois is the perfect location for soup in January. Plenty of cold windy days where soup is absolutely what is called for.
Our most recent soup month celebration turned out to be an absolute winner. Slow Cooker Creamy Chicken Noodle Soup was everything you want in chicken noodle with a little extra richness from the cream. It was fabulously easy to prepare too. I added a little shredded carrot as suggested, and used Reames frozen noodles because I love the thick chewiness. It's pretty thick consistency, so you may need to add a little chicken broth when warming leftovers.
I'd give this recipe my highest recommendation. Ease of preparation plus wealth of flavors make it an all around winner and a repeat act at our table.
