Waffle Winner


Since the last waffle experiment went so well, I was excited to try another one.  That waffle iron has seen more action in the last three months, than it has in last 15 years!

This month's edition was Egg & Cheese Hashbrown Waffles.  Obviously, waffles are a normal breakfast food, but they are normally just hard-to-butter pancakes.  These were so much better!  I love the hashbrowns cooked that way, although it did take me a bit to figure out that they needed to cook longer than I thought.  The egg and cheese mixture was also very good.  Some of the comments in the original post referenced a dry consistency, so I was careful to give a good stir to the mixture before each batch.

I can't wait to make these to keep on hand for future breakfasts.  So yummy!
