Roasted Pineapple Rum Chicken


I loved the sound of Roasted Pineapple Rum Chicken, and it did NOT disappoint.  The sauce is absolutely delicious.  I only wish that I had used boneless skinless chicken breasts so that I didn't lose the flavor with the skin!

The sauce for this dish was super easy.  I just used canned pineapple chunks to save on chopping, and instead of jalapeno, I just added a few drops of hot sauce.  (I've found that's a reasonable substitute for us--heat without tears.)  Dump it over the chicken and you're good to go.  And it IS good!

This chicken looks so good! I like the pairing of chicken and pineapples together and the hint of spicy is probably a great addition! Can't wait to see what else you come up with!
