There's something about fancy pancakes that make supper really fun. I love decorating them with various toppings, and mixing up the flavors a little.
These Brown Sugar Banana Bread Pancakes seemed like a little much for breakfast time, but perfect for dinner. I did not make them with whole wheat flour as the recipe listed, but chose the regular all purpose variety.
These pancakes are substantial. The batter comes together very easily, but the banana definitely thickens the batter compared to the regular plain variety. I love that the finished pancakes had a bit of the density that comes with regular banana bread--very moist and chewy.
Topping fancy pancakes is always fun, too. We chose from sliced strawberries, syrup, chocolate chips, toasted walnuts, whipped cream, and butter. We each picked the toppings we like the most and were all very happy.
I'll definitely keep this recipe around for special Saturdays, evening meals, and weeks where we don't get our bananas eaten in lunches.
