I love chicken salad, and I'm always ready to try a new version or style. I liked the sounds of these Harvest Chicken Salad Sandwiches because of the fruit mixed in and the lighter take on chicken salad.
I followed the recipe as instructed, but then because there didn't seem quite enough dressing/yogurt to bind the ingredients together I added just a tablespoon or two of light Miracle Whip. I also added a sprinkle of sugar, because I like for the sweetness of the fruit to come through just a bit more.
This was a great chicken salad recipe and I felt good about eating it. We had ours on toasted pretzel rolls from Costco. Love those things! Will definitely hang on to this recipe for future use.
