Pancakes are one of my little one's favorite foods. Her second birthday party was a pancake party she loves them so much. One of her favorite hot lunches at school is pancake day.
Which means, that I'm always on the lookout for new ways to pancake. This time around it was Peanut Butter Pancakes. I wasn't sure how the peanut butter would work in the batter, but the melting trick works just fine--very blendable.
The best part of these pancakes is how to top them. The combinations are endless because peanut butter pairs so well with so many things.
At our house, Papa Bear chose butter, chocolate chips, and regular syrup. Mama Bear chose butter, strawberries, chocolate chips, and whipped cream. Baby Bear selected butter, strawberries and regular syrup. Next time I want to try sliced bananas, chocolate chips and whipped cream, but you could choose chocolate syrup, apples, chopped nuts, toffee, and on and on in endless combination.
The best part of the whole thing? "Decorating" my dinner and making it pretty!
