There is an interesting coincidence of March. St. Patrick's Day is coming, all things green and minty sound delicious, and Girl Scout Cookies arrive. It's the perfect storm of mintiness.
Once again it was a Deacon Dessert night, and I had mint on my mind. I looked at recipes for mint brownies, mint cupcakes, mint cookies, and finally settled on this Girl Scout Cookie Thin Mint Chocolate Pie. Almost one word in the title per layer in the pie.
This is a cool, minty concoction that turned out to be a perfect treat on an warm spring evening. There aren't a lot of ingredients, but by combining what you have in various layers, there is lots of flavor to be had. I changed things up a bit, but spreading the remaining Cool Whip as a top layer and then sprinkling Andes mint pieces on the top. (Don't tell the guys I forgot the chocolate sauce!)
This is great for St. Patrick's Day, but would also be a terrific summer night dessert. The pudding, Cool Whip, and mint together are refreshing.
