Here's another good recipe for smoked sausage from Taste of Home, Sweet and Sour Sausage

This had a great sweet and sour flavor and was super simple to make, even if I did forget the apricot preserves and had to make an extra grocery run this week.  I think in the future I'll cut back on the amount of ginger.  It seems I've become super sensitive to the ginger flavor, and a little bit goes a loooooooooong way with me.  The prep was easy because a rough chop was all that was needed on the veggies and meat.  Prep some simple instant rice and you're good to go!
