As the day drew closer, I wasn't finding any inspiration. One of the things I love about meatballs I just throwing them in the slow cooker with some sauce and calling it a day. However, I wasn't seeing any new recipes that sounded appealing, nor did any old standbys crave my attention. I noticed in my refrigerator a bottle of Chick fil A Polynesian sauce was just hanging out. We only ever use regular Chick fil A sauce, which is what I thought I got when I grabbed this bottle. I put it out when some teenagers were here for a meal, and I little was used, but ever since it's been languishing untouched.
I decided to experiment and see what the worst that could happen. I threw in a bag of meatballs into the slow cooker, a can of pineapple chunks (drain it first), dumped the rest of the bottle of Polynesian sauce over the top, and turned it on low. Later in the day, I boiled some carrots until they crisp tender, and tossed those into the mix. As it got closer to dinner time, I noticed the sauce looked a little thin. I combined a tablespoon of cornstarch and a tablespoon of cold water and stirred it in to the meatballs and cranked the heat to high. The cornstarch step is probably less necessary if you do a better job of draining the pineapple.
For serving, I made some rice in the oven, and put everything on top. This was really tasty, especially for putting it together on the fly. I liked the sauce on the carrots (part of the reason I added them later), and the pineapple added a nice Polynesian touch. I'm also really happy to have the bottle of sauce out of the refrigerator without going to waste. Is it going to rock your world? Nope, but it will give you a few days worth of tasty leftovers that you won't hate, and you barely did any work to begin with. Perfect.
