A Beans and Weenies Special Guest Chef

It's Spring Break season, and since my break and my child's break don't align, we always make sure to plan something extra special. This year it was wisdom teeth removal. Good times.

Since she had a little extra time, my kiddo decided to make dinner one night, this Creamy One-Pot Cheddar and Broccoli Orzo. She looked for a recipe she figured she could eat five days post-surgery and I made sure to have the ingredients on hand. She is not super comfortable in the kitchen, but I applaud her for trying new things and pushing herself to cook when it stresses her out.

Unlike me, my offspring pretty much follows the recipe as is. She's careful to measure correct amounts, and doesn't alter the ingredients much. The only thing we decided to omit was the garlic powder. We both agreed that two garlic cloves was probably going to be enough garlic for our tastes. We used frozen broccoli and doubled the quantity because one cup didn't look like enough. 

This was so yummy! I was everything you love about a good broccoli cheddar soup, but with orzo thrown in. In fact, I commented that I think I might add orzo to soup some time, just to change things up. If you wanted to up the protein here, you could totally throw in some cooked chicken or smoked sausage, it would taste great. 

Kudos to my kid for stepping out of her comfort zone and making a great dish!

I love to see your children become personal chefs in the kitchen! This is a great meal cause it has all the parts of a nutritious plate. I'm having my wisdom teeth removed soon, and this gave me a good idea to also prepare the meals that I'll be having to eat due to the painful chewing.
