A Giant Little Debbie

The Little Debbie Cosmic Brownies are a fav at this house. For packed lunches, after school snacks, extracurricular activities, and any other occasion, it is the top tier sweet. Which, of course, means recipes that promise Cosmic Brownie flavors must be tried.

Enter this week's edition featuring the Cosmic Brownie Cookie Cake. I've mostly been baking cookies since last year's holiday season, and it seemed like time for a change of pace, even if a cookie cake isn't too far afield. As most brownie recipes are, this is pretty easy to throw together. I made sure to use the good baking cocoa from Costco, which always makes things tastier. My springform pan is smaller than 11 inches, I think, so I ended with a baking time of about +10 minutes. For the ganache, I used chocolate chips, and the flavor was great, so don't stress if you don't have baking chocolate. In this case, it doesn't matter. I did not have the official sprinkles of the Cosmic Brownie, but just about any sprinkles will make this look festive.

This was delicious and sooooooo chocolatey. We had lots of fun enjoying this, especially because it was still a little warm from the oven.

This Cosmic Brownie Cookie Cake sounds absolutely amazing. I’d love to try making this myself, though I have about 50/50 luck when it comes to baking. Sometimes things turn out great, and other times, not so much, but this recipe doesn't seem that hard, so I might just have to give it a shot. Thanks for sharing your experience!

Brownie recipes are pretty forgiving. You should try it! (And don't worry if you don't have a springform pan, a regular baking pan would work just fine.)
