The best way to understand this soup is to think of every chicken chili you've ever eaten. (If you've been around the blog for any time, you know I've made several different recipes over the years.) Then, subtract the beans. For my family, this is the winner. They don't love beans of most types. Navy, black, kidney, red, cannellini, etc. are just a means to the end of enjoying chicken chili. This recipe has no beans. Could you add them if you're in the bean camp? Sure. The original post even gives you some additive suggestions. I think they would totally work, but sometimes simple is also good.
This is a lovely soup with great flavor. We topped ours with sour cream, avocado mash, and tortilla chips. It was delightful! This recipe makes a big batch, so plan on plenty of leftovers to look forward to.
