Soup season is back in full swing. The cold temps and brutal wind have made staying in and enjoying new soup recipes the perfect pairing. I have a long love of Gnocchi and it's beautiful potatoey, starchy goodness. I had some Italian sausage languishing in the deep freeze so this Creamy Italian Sausage Gnocchi Soup came along at just the right time.
If you've made soup from scratch before, this one will be pretty easy to throw together, and I stuck to the instructions pretty closely. I did use red onion since I had most of one already chopped and ready to go. I also skipped the celery, and just used a heavy hand when measuring the carrots. I never miss the celery, and I always enjoy more carrots, so win/win.
This is a yummy soup! I went light on the red pepper flakes, but depending on the heat of the sausage you use, you might not need any. It was perfect with a crusty loaf of bread and some butter.
