Special Occasions

Whenever there's a special occasion to celebrate, I always ask the fam how they want to celebrate or if they have any menu requests. To celebrate Valentine's Day last week, they requested Alfredo pasta, which is not a surprise to you if you do a search for such recipes on this blog. It's definitely one of our favorites.

I decided to do a shrimp version, since that is also a favorite, and I knew I had some in the freezer. This recipe seemed like a perfect one to try. I followed it almost exactly, and it was delicious! As I was letting the butter melt for the sauce, I did let it get almost to the brown butter phase, and I think that added amazing flavor. The next time I make it, I think I'll let it get all the way there. In addition to the recipe as called for, I steamed a bag of frozen broccoli crowns in the microwave and added it to the pasta when I added the shrimp. 

If you are celebrating a special occasion, or even if you are not, I highly recommend this recipe. The flavor was so rich and delicious without being too rich or too garlicy. It was the perfect balance, and I was a little sad to see it finished. If you need a little accompaniment, these biscuit breadsticks are delightfully buttery and the perfect addition.

As someone who likes to meal prep, I'll definitely give this recipe a try! It looks fairly quick and easy to make. Also, pasta is something that keeps me full so I try to eat it a few times out of the week. Thanks Heidi:)
