Expanding Our Horizons

I often shy away from sweet potato recipes. I find them quite middling, and the other two at my dinner table don't express much interest at all. I've tried a few recipes here and there, and we've liked them enough that I don't reject them out of hand when they pop up on Pinterest from time to time.

I still have a lot of ground turkey in the freezer due to some excellent sales at the grocery story, so this Ground Turkey Sweet Potato Bake caught my eye from that perspective more than anything. I was willing to give the sweet potatoes a go, since it seemed like a great combination. I've also been trying to be more cognizant of adding more veggies to our diet this year, so the zucchini ticked that box as well.

You'll need to give yourself a bit of time for this recipe since the sweet potatoes take a bit to bake. The seasonings were the perfect match for the turkey and sweet potatoes, and in fact, I would use them on other ground turkey recipes in the future. I especially liked the balance of the sweet flavors with the savory turkey. It was the perfect bite. The zucchini was fine. I think I would bake it slightly less time so that it stayed a little crunchier.

I really enjoyed this dish' flavors, especially the pairing of the turkey and sweet potato. It was a lovely, light dish that was filling but not heavy.

I absolutely love sweet potatoes!! I am always looking for good and easy recipes that I can make in my little apartment that's a balanced meal. I find it hard to make vegetables taste good and this looks like a yummy way to get my veggie intake.

I also love sweet potatoes! If you ever want to have them again I suggest frying them in slices or making them into fries, which is a pretty obvious option. You can have them with a burger or something savory since they are on the sweeter side. And now that I'm thinking about sweet potatoes, I want to fry some up and eat it!
