The Easiest and the Cheesiest

Sometimes I'm a skeptic when recipes are super simple. It seems like there might be something missing with the simplicity. Not so with this Mac and Cheese Tortellini.

It really is so quick and easy. Boil the pasta and drain, add a cup and a half of cheese (I used Colby Jack), and a couple tablespoons of sour cream. Voila!

This was delicious in its simplicity. The seasoning of the cheese mixture in the tortellini gives it a little something extra, but you could totally just use regular dry pasta if you want. I am keeping this recipe close at hand, as it is every bit as easy as the boxed variety, and I almost always have the ingredients on hand.
