March is Making Happy

I am so glad that March is here. The forecast is warmer, we're seeing the sun more, and that means spring starts soon. Woot!

The menu for March is dedicated to the task of emptying out the freezers and pantry in preparation for our move. The balancing act of keeping a kitchen I can cook in and yet not have to move a grocery store worth of food is challenging! I'm also trying to move away from all soups and comfort foods.

Cheers to spring and the changes it brings.

My birthday is in March so I wanted to see what meal you would be preparing on my birthday. Hope you enjoy those Open faced Chicken Parm Sandwiches.

I am always so impressed by people who can meal plan and stick to their plans. This made me think about the fact that in a few months I am going to be graduating which is similar to moving so it will for sure be important for me to start meal planning soon or at least for the month of May. Loving the warm weather and sunny days!

The sunny days and longer nights are definitely my favorite times of Spring! This just gave me a ton of motivation to stick to my meal plans and not go to Subway in a few hours!

I'm using March as a motivation month. Hoping to pull through the entire month practicing discipline and really taking care of myself. I might just plan out my meals for the month too. This could actually be a huge help!
