Tater tot casserole is everything that is good and right from the kitchens of the Midwest. Tater tots plus breakfast? A clear winner of a meal.
Breakfast Tater Tot Casserole is everything we hoped it would be--crispy tots, bacony goodness, and cheese, gooey cheese. This was pretty fast to assemble and pop in the oven, especially since I used precooked bacon bits. If you need to cook your bacon, allow a little extra time or make it ahead of time. It is a nicely seasoned dish, that could easily be adjusted to your taste by using sausage or ham or a combination of breakfast meats.
This would be an awesome addition to any breakfast or brunch. Maybe keep it in mind for upcoming Easter or Mother's Day celebrations?
