Taking Taco Tuesday to the Slow Cooker


Here's a super simple solution to Taco Tuesday, not that it was terribly complicated before. These Slow Cooker Enchilada Meatballs are tasty, simple, and couldn't be easier on busy day.

I started with turkey meatballs (my choice for most meatball dishes because I can't taste much difference), and just tossed them into the slow cooker. I ended up using green enchilada sauce because once again, all of the regular enchilada sauce was taken from the shelves of the grocery store. Ultimately, my kiddo preferred it so it will be my choice for the future. Add one can of drained Rotel and let it cook! Add your choice of cheese in the last few minutes, serve over some baked rice, and voila! Amazing taco dinner with hardly any work.
