I've had these Taco Pancakes pinned forever. I love taking ordinary foods and mixing them up in a different format. It's mind bending and fun all at the same time.
I really enjoyed these, especially the crispy cheesy edges. The corn meal/flour mixture was very tender and didn't hold together quite like a regular pancake, but that didn't affect flavor one bit. We topped ours with just a little sour cream, a sprinkle of cheese, and green onion, but you could add any of your favorite taco toppings like salsa, avocado, or tomatoes.
A note: this is a pretty big recipe. More than enough for two meals for our little family. If you've got a bigger family, you might not have to double to get everyone fed.
If you're looking to change things up for this week's Taco Tuesday, this is a good candidate, and one your family will probably love every bit as much.
