
Our version of this dish included ground beef, mild Rotel, mild taco seasoning, and sharp cheddar. We topped our servings with some fresh chives, a little sour cream, and a crumble of tortilla chips, and all really enjoyed it. So much so, that we came back for leftovers the very next lunch (and it warmed up great).
I think you'll find this to be a hit at your table, and your leftovers, if there are any, will disappear in a flash too.
