Taking the Easy Way

Robert Frost had a thing about taking the road less traveled, but in this case, I think the easy, well-traveled road paid off big time.

I love the squishy, potatoeyness of gnocchi.  Paired with meatballs (high on my kiddo's list), this Gnocchi and Meatball Bake was destined to be a winner at our table.  Add to that the fact that it had a super easy version (frozen meatballs shine again), and I couldn't wait to try it.

Honestly, there's nothing exotic about this recipe.  It is, however, a perfectly easy execution of flavors your family will find familiar.  Tired of spaghetti but don't want to listen to gripes?  This is your answer--all things familiar and new at the same time. 

Final thought: don't skimp on the cheese!  It's bubbly toastyness makes this extra special.
