Sloppy Joe Tots

This Crock Pot Sloppy Joe Tater Tot Casserole is all things 'Merica wrapped in one recipe with a sprinkle of cheese.  And even better, when you realize you only have ten minutes or so to throw it together (don't ask how I know😳), it's still super easy.

I was a bit skeptical as to the quality of the tater tots after being slow cooked.  They held up pretty well using the tea towel trick.  The ones around the edge were pretty crispy (a few were too toasty, but that's a crock pot issue), and the others were very good. 

As for recipe swaps, I just subbed in red beans for kidney beans.  We find kidney beans to be very mealy and beany, so red beans were an easy substitution.  Otherwise, everything was as listed.

My kiddo is very ambivalent about sloppy joes.  She eats them, but doesn't enjoy them.  However, she liked this recipe, or at least found it, "not too bad".  The hubby and I also like the recipe, and good thing, we've got oodles of leftovers to work our way through.
