
We're always up for a little more verde around here, especially "verde" good verde. These
Salsa Verde Chicken Enchiladas were super easy, if a little fragile, but for some reason they had heat! Nothing a little slather of sour cream couldn't cure, but I still can't figure out what the difference was this time around.
This recipe seems like one I could make on a whim almost any time. I've usually got cooked chicken sitting around, and we almost always have salsa verde. Throw a little cheese on there, and you're good to go.
