Souper Serious

After nearly 10 years of blogging, I've probably used up all the souper jokes, but most likely I'm the only one keeping track.

Today's Loaded Broccoli Cheese Soup was certainly a souped up potato soup.  Big chunks of potato, carrot, and broccoli buried in cheesy goodness.  While I wasn't a fan of the two pan prep process, the end result was delicious.  I chose to use red potatoes (and left the skin on), and some shredded carrots rather than the diced.  Nothing crazy when it comes to substitutions, but there you have them.  You'll also want to make sure you add more salt than the recipe calls.  All those unsalted veggies need the help.

I loved the beautiful colors in this soup, and it was really great to enjoy this hearty soup on a cloudy, dreary day.
