I think I'll develop a new recipe rating system where success is measured in how many days of leftovers my kiddo will eat. This Ramen Vegetable Beef Skillet was a huge winner for us all. Easy to make, and outstanding flavor, plus a healthy dose of veggies to boot.
Generally, I followed directions. 😉 Since I had shredded carrot on hand, I saved a step and used those instead of slicing my own. I highly recommend this option from a labor-saving point of view. I had to let mine cook just a little longer than the recipe suggested and add a little extra water, just to get the noodles all softened, so keep that in mind.
This is a great recipe. Super simple and tasty, and worthy of breakfast for a few days after. 😋
