Quiche for Cowboys


Sometimes, for whatever reason, I have to punt on the menu plan and make a last minute change.  I'm always a little extra thrilled when the change-up exceeds my expectations.

Such is the case with Cowboy Quiche.  It's got completely basic ingredients, and yet it tastes anything but boring.  I used refrigerated bacon crumbles instead of cooking my own, which makes this recipe even more simple.  One note of caution - this is a lot of egg mixture, make sure you use your largest pie plate.  If you are using a fairly standard sized dish, plan on extra baking time.

I am totally keeping this in my back pocket for the future.  It's too good to make only once.
