Taco Pizza with a Twist

Taco pizza is pretty common in central Illinois.  It wasn't until a year or two ago that I found out it's not common in other parts of the country.  That was a surprise!  So many people like both foods, I just assumed it was a natural conclusion.


This Cornbread Taco Pizza takes traditional taco pizza in a new direction, a very good new direction.

Cornbread and taco flavors make sense together.  The slightly sweet cornbread added to the spicy taco meat is perfect.  I used a regular Jiffy cornbread mix, and it was so tender and yummy with the other toppings.  As for toppings, you can keep things simple with meat and cheese, or add all the traditional things you like on your taco.  I buried mine in sour cream and fresh garden tomatoes.  It doesn't get healthier than that, folks.😉

If you are a taco and pizza loving family, I can't recommend this recipe more highly.  It's everything you love about the original, but a little better, and it's pretty easy.  Enjoy!
