Since my kiddo loves her some pancakes, I always try to make sure that we celebrate Pancake Tuesday. We don't observe any of the other days of the season, but we'll use occasion to eat pancakes.
This year we enjoyed these Funfetti Pancakes. They are basically pancakes with frosting, so pretty much cake, but nobody complained! I actually used vanilla cake mix instead of yellow, but it still had plenty of cake mixey flavor. A hint--letting the batter rest for a bit after you mix it up generally makes the pancakes nice and fluffy. In this case, don't let the batter sit too long or the sprinkles will start to bleed a little bit.
These would be perfect for a birthday celebration or for holidays with specialty colored sprinkles! Plus, sprinkles make everything better.
