Ridiculously Excited

While most of the folks around me are reveling in a Cubs' World Series win, I'm just over here ridiculously excited about soup season.


We officially jumped in this week with this Slow Cooker Chicken Corn Potato Chowder.  The prep method for this soup is "souper" easy.  Chop potatoes and onion and throw everything else in.  Even shredding the chicken is a breeze.  I guess if you actually made your own bacon crumbles there would be more to it, but why would you when Costco does such a magnificent job?

I really enjoyed this soup, once I got enough salt added of course.  It was rich and hearty without being overly heavy.  A great start to this new season.
