Salsa Verde dishes seem to be the Tex-Mex flavor we can all agree on at our house, so I often pin recipes that use it, including this Salsa Verde Chicken and Rice. It's also a great recipe because it's pretty quick for a weeknight.
I think I followed the directions completely on this recipe, and that is a minor miracle. I had to cook ours little longer than recommended to get the rice done, but other than that, completely as written. I should get a medal or something.
This is a simple dish with excellent flavors, and an easy throw together meal. Definitely a keeper.
