Chicken Pesto with a Twist

At the end of a long teaching day, and with PTO waiting for me after dinner, I needed easy.  Easy but not lousy.


These Chicken Pesto Flatbreads were the perfect answer.  I purchased small flatbreads and refrigerated pesto from the store, and already I was ahead of the game.  I used chicken cooked earlier in the week and grated some colby jack cheese over the top, and then slid them in the oven.  Easy peasy, and delicious.
