Several years ago on one of our many trips to the Riviera Maya, we had pork and pineapple tacos. They were the best, and I'm on a continuous hunt to find that flavor again. It's probably been long enough that I don't really know what I'm looking for, but I sure enjoy trying different recipes along the way.
These Sweet and Spicy Pork and Pineapple Tacos were easy and tasty, an excellent recipe. I used fresh pineapple and boneless pork chops for ours. I also choose not to add cayenne. If you've been around this blog for anytime at all, you know that it's just not worth the risk with my little doll. She can't take heat, no matter whether it's in spice or temperature. We also did just a light sprinkle of shredded fiesta cheese. Perfection.
