Mexican Pot Roast

Otherwise known as Crockpot Fajitas.


This has to be one of the easiest recipes out there.  Not only that, the results are amazing.  The roast cooks low and slow so that it's nice and tender with perfect seasoning and flavor.

I used this recipe as the perfect time to clean out a few jars from the fridge.  Instead of all salsa, I used a combination of regular mild salsa, peach salsa, and mild taco sauce.  I doubt it makes a bit of difference.  I actually started the roast from frozen about 7am, and then added my peppers and onions after I got back from the store a couple hours later.

One of the best things about this dish was the five minutes from crockpot to table.  This is a great summer dish, with all the comfort and convenience of a winter roast.
