We have a lot to celebrate this weekend. There was the Kentucky Derby, Cinco de Mayo is coming, and mostly, we have a new family member. A sweet roly-poly lovebug named Gloria. Here she is:
In honor of all these festivities, we invited some family over to share in all the fun.
We started with this Kentucky Hot Brown Pizza. It is awesome. I had to show restraint and only have two pieces. I used homemade pizza crust, but otherwise pretty much kept everything else the same. As a fresh tasting, tropical, nod to Mexican flavors, I tried this Pineapple Cucumber Salad. It was yum! In the future, I would make it with mint instead of cilantro because the lime/mint combo is fab. Still, ecstatic to discover a new side salad combo that is simple and delicious. My sister brought along some Apple Enchiladas to wrap things up on a high note.
We had a lovely time together enjoying the puppy, the out-of-doors, and each other's company. Oh, and the food was pretty good too.
