Technically, it's not zucchini season yet, but for whatever reason, that sounded good to me today. So I gave it a shot in this Sweet Corn and Zucchini.
It was so good! I did not expect to like it that much, but it was delicious and I'll definitely be making it again. I didn't use the full quantity of zucchini because our little crew doesn't need that much. So I used one small to medium zucchini, some frozen sweet corn from last summer, onion and fresh chives. I also cut the taco seasoning back to 1 teaspoon because it seemed more appropriate for the quantity of veggies I had. I ended with a sprinkle of cheddar over the top of the skillet. Yum!
