I'm back. School is finished (for me anyway), and now our lovely Disney cruise is behind us. Time to settle in for summer. It's still a little helter skelter around here, so I'm taking each day's dinner as it comes. I'm working on a June menu plan, though, so we should be back to normal soon.
Tonight I wanted to use up some pesto left in the refrigerator, and found lots of pins for this Baked Pesto Chicken. It's nothing fancy and needs a little salt, but after a week of eating four course meals every night, simple tasted delicious. It's super easy to throw together, and doesn't need a lot of babysitting either. Not bad for my first night back in the kitchen.
