Maybe just plain nutty, which is where I think we are all headed if winter continues. Between cold weather, more impending snow, and an endless parade of germs and viruses, we are all ready to kiss winter goodbye.
I loved this Coconut Stuffed French Toast, and looked forward to making it all day. I really dig toasted coconut, so the idea of doing that on purpose, on top of French Toast--mmmmmmmmmmmmmm.
Not a lot to say about the prep for this recipe, it really went pretty fast. The coconut stayed on the outside very well, much to my surprise. The biggest challenge I had was the fact that half my loaf of French bread had a giant air bubble inside, so it was basically a crust! I managed to get six slices out of the whole loaf, but just barely.
