Hunker Down

It is COLD here.  We are experiencing record cold and wind, plus we have blowing and drifting snow.  Good times.  In truth, we have been enjoying extra family time together (snow day #2 after the holiday is tomorrow), and I found an awesome, easy crock-pot recipe that fits the bill for cozy, comfort food.


The title of this recipe, Please Make Those Meatballs, is enough to give you a chuckle, but one bite tells you why--deliciousness!  Especially since they are so easy.

I used a bag of turkey meatballs (not Italian, just homestyle), 98% fat free cream of mushroom, beef base, water, and a packet of brown gravy mix.  Stir the sauce ingredients together and pour over the frozen meatballs.  Voila!  7-8 hours later?  Meatballs!  I served our meatballs over mashed potatoes and alongside these carrots (a smaller batch).  Double yum.

Go forth and meatball, people.  You won't be sorry.
