With a good rush of snow headed our way, I so glad to have a warm, cozy choice for dinner. These easy Chicken Chimichangas were so good. Rave reviews all around!
I did choose to use cheddar instead of pepper jack cheese to make sure they didn't get too hot, but kept the taco seasoning. Also, rather than just using cooking spray to brown the enchiladas, I added a little bit of butter. I really wanted to make sure they got the crispy exterior that usually comes from frying.
These chimichangas are a great family option that you could customize many, many ways. I definitely will make them again.
