Mmmmmm Mac


Today's recipe is another familiar idea in a new way.  I love the fresh flavors of Caprese, and, of course, mac & cheese is always a hit in my book.  I didn't have to think twice about trying this Caprese Mac and Cheese.

This is a pretty simple recipe--a white sauce, add fresh mozzarella and voila!  Here's what happened in my version of the recipe:

  • Skim milk (that's all we keep on hand)
  • Fat free half-and-half
  • Onion powder for extra flavor.
  • Plenty of salt (and pepper if you like it.)
  • Cherry tomatoes rather than Roma.
Hubby and daughter preferred this recipe sans tomatoes and basil.  I loved it with.  I recommend making this simple, easy recipe and deciding for yourselves!
