Actually this is not Totally Taco. I don't know what Totally Taco is exactly, but it shows up on the school lunch menu from time to time. My little one, not being one for taco flavors under many circumstances, never eats it, so I don't actually know what makes a taco, totally taco.
Technically these are called Chicken Enchilada Puffs, but the pin I found called them Taco Balls. Either way, good stuff. I used reduced fat cream cheese and cheese, and extra mild salsa in my mixture and it was a great combination. Although it wasn't spicy, even a little, it had great flavor. Delicious topped with an extra sprinkle of cheese and a little sour cream.
