Tortellini Taco Tuesday

Somewhere along the way, I saved a post with five ways to use Buitoni tortellini , of which Taco Tortellini was one. Each of the recipes seemed easy with only a handful of ingredients, especially important on busy school nights when getting dinner to the table quickly is paramount. I will likely try a couple of the other choices in upcoming months. This was a simple recipe, and I just changed up the preparation in way that made more sense to me. The recipe didn't say to specifically brown the ground beef, but it just seemed weird not to. So I browned and drained the beef, and added it back to the skillet before I added the tomatoes and taco seasoning and let it simmer. Once I added the cheese, I put the skillet on for a minute to help with melting. For tortellini, I just used a store brand frozen cheese variety. Patty Melt Pizza

As previously shared , my brother loves a patty melt, and any recipe I find that leans that direct makes me think of him. Now, for sure, the ideas of Patty Melt Pizza seemed like a good thing anyway. Plus, you know I'm a big fan of taking familiar flavors and changing up the format. It's a surefire way to get a recipe win. Because I'm me, I made some changes to the recipe as written. First of all, I didn't feel like buying a whole bottle of thousand island dressing just for one recipe. I had hoped our grocery store would have some packets for individual salads that I could purchase, but alas, it did not. I ended up making my own concoction with ranch dressing, mayo, ketchup, and a few chopped dill pickles. It wasn't a perfect formula, but it was pretty close for a complete guess. I'll Try Anything

Pinterest throws some weird things my way, and I'll jump on a lot of those suggestions. In today's example, they said, "Why not spaghetti grilled cheese ?" and I replied, "Sure." So I pinned it and moved on, only to be reminded a little later when my daughter spotted the same suggestion on Pinterest and was fully intrigued. This recipe is not without a little work. First, there's the making of the spaghetti, not hard, but some time to put it together. Then, the seasonings and butter mixture is another step that takes a minute. Finally, you've got to assemble everything and keep the spaghetti on the bread. This was a fun bite. The spaghetti is a funky contrast to the toasted bread, plus that lovely melted mozz is all good. The butter plus herbs in the crust is truly yummy. I felt like maybe there was a touch too much garlic, but I am not someone who loves a lot of garlic.
