Brownies for Breakfast

There are many things you learn as you become a mom, probably the most important thing is how much more appreciation you have for your own Mom based on what you know now.  If you are like me, you think daily about what to feed your child that is tasty and nutritious.  There is constant pressure from media and other sources about exactly what, how often, in what form, from what source, etc., you should feed a child and truthfully that only complicates the dilemma. 

One of the things I remember fondly about my Mom, and that I try to keep in mind in my own parenting, was that she occasionally said it was okay to have red velvet cake or a rice krispie square for breakfast.  She knew that we got adequate nutrition from other meals and didn't worry about taking a meal off from nutritional soundness here and there.

What I love about this Baked Brownie Oatmeal is that it is the best of both worlds.  It is indulgent and really very healthy.  There is not a lot of fat or sugar in the recipe and good grains in the oatmeal.  When you make it with dark cocoa and dark chocolate chips, as I did, you get fabulous chocolate taste and the benefits that dark cocoa provides.

While this is super yummy fresh from the oven, it also tastes great warmed in the microwave.  Just add a little butter on top and you get a wonderful buttery, salty contrast that makes a perfect start to the day.
