Tis the season for all things pumpkiny. On Sunday I was looking for a quick treat to make for our Sunday School class. I found this quick recipe for Pumpkin Streusel Muffins in my handy 30 minute Taste of Home cookbook. (I've used so many recipes from this book. Thanks Mom!)
These are a nice moisty muffin without a strong spice flavor. The orange peel really brightens up the taste and distinguishes the recipe from the "typical" pumpkin. Because of the typical pumpkin pie spices, I'm not a total pumpkin lover and these were enjoyable for me.
I only made one substitution in this recipe--honey for molasses, since I don't keep molasses on hand.
