The Elusive Noodle

We really enjoyed this Peanut Chicken Stir-Fry. It had the nice peanutty sweet flavor balanced with the saltiness of the soy sauce. Next time I'll leave out the red pepper flakes altogether, because I don't think it needs the bite at the end of each bite.

The biggest gripe I have with this recipe is the need for thick rice noodles. I visited three different stores and didn't find them. I didn't find rice noodles of any type. I know this recipe came from my Simple and Delicious magazine. Seems to me the Simple part should also include the finding of ingredients.
