Tonight was a return to a new favorite, Oven Risotto. This time with chicken and mushrooms. I made this combo one other time and it is really tasty.
Salad was called for as a side, so I went in search of a recreation of Olive Garden's house dressing. I used this version from Food Network. It's an okay salad dressing, but it's definitely not Olive Garden's. I may try some of the other copycat recipes out there, or maybe I'll just visit the restaurant when I'm in the mood for the dressing.
Edit: I almost forgot! For dessert I made this Macadamia Chip Brownies. Perhaps my version should be called Pecan Chip Brownies. They are yummy even if I did rush them to get the risotto in the oven.
